Overview
Serves 4 • Prep 20 min • Cook 35–45 min. A classic shepherd’s pie adapted for Panasonic microwave + convection.
Ingredients
• 600 g lamb mince • 1 onion (150 g), diced • 2 carrots (200 g), diced • 2 tbsp tomato purée
• 250 ml beef stock • 1 tbsp Worcestershire sauce • 1 tsp thyme • 600 g floury potatoes • 50 g butter • 60 ml milk • Salt & pepper
Method
1. In a large microwave-safe bowl, microwave onion, carrot and 1 tbsp oil 800 W 4–5 min covered until soft. Stir in lamb; microwave 800 W 5–6 min, breaking up.
2. Add purée, stock, Worcestershire, thyme; microwave 600 W 6–8 min uncovered to thicken. Season.
3. Meanwhile, microwave potatoes in chunks with 3 tbsp water, covered, 800 W 8–10 min. Mash with butter, milk, salt.
4 (Convection/Grill finish). Spoon lamb into a dish, top with mash. Bake 200 °C 15 min then grill 2–3 min to brown.
Tips & Substitutions
Swap 150 g lamb for finely chopped mushrooms for lighter flavour. Make-ahead friendly; reheat 180 °C until piping hot.
